This week’s Menu Monday is so easy, I don’t even know if it qualifies as a recipe 😉 4 ingredients & many ways to “make it your own”, you can’t go wrong with Avocado Chicken Salad! Eat it with a fork, on a bed of lettuce, in a wrap, with some cucumbers, plantain chips or corn chips! Yum, yum, enjoy!
Avocado Chicken Salad
Ingredients
- Shredded chicken
- Avocado
- Salsa
- Lime jucie
Directions
- Cook chicken and shred (My favorite ways are either in the crockpot & then shred with my kitchenaid mixer – super easy! Or buying a rotisserie chicken and shredding it up.)
- Smush (that’s a technical kitchen term FYI 😉 ) avocado & mix with salsa. No real measurements here, just use as much of both to get your preferred consistency and taste. Use your fav salsa – mild, medium, hot, peach, pineapple, mango, whatever – go crazy!
- Mix in chicken.
- Squeeze with a fresh lime & voila!
Easy as can be & should please the taste buds!
