Warmer weather has me craving all my spring and summer favorites, like delicious chicken salad! This healthier twist on a typical chicken salad was in my inbox this week thanks to My Fitness Pal Blog. It looks amazing and I will definitely be picking up the ingredients for this next time I’m at the store!
Eat it straight up with a fork, on top of your favorite slice of toast (gluten free, ezekiel break, etc), in a lettuce wrap or maybe with some crackers. Yum!! Enjoy!
Ingredients
- 4 slices center cut bacon, cooked and chopped
- 1 lb grilled chicken breast, diced or shredded (I prefer shredded)
- 1/2 avocado, diced
- 1 c grapes, halved
- 1/4 c dried cranberries
- 1/4 c Whole Milk Plain Greek Yogurt
- 1 tbsp honey
- 1/2 teaspoon lemon zest
- juice from 1/2 of a lemon
- salt and pepper to taste
Directions
- Combine bacon, chicken, avocado, grapes, and cranberries in a large bowl.
- Whisk together yogurt, honey, lemon zest, lemon juice, and salt and pepper in a small bowl until mixed well.
- Pour yogurt dressing over chicken salad mixture and toss to coat.
- Serve as desired.
