Bacon-Avo-Chicken-Salad

Warmer weather has me craving all my spring and summer favorites, like delicious chicken salad!  This healthier twist on a typical chicken salad was in my inbox this week thanks to My Fitness Pal Blog.  It looks amazing and I will definitely be picking up the ingredients for this next time I’m at the store!

Eat it straight up with a fork, on top of your favorite slice of toast (gluten free, ezekiel break, etc), in a lettuce wrap or maybe with some crackers.  Yum!!  Enjoy!

Bacon Avocado Chicken Salad

Ingredients

  • 4 slices center cut bacon, cooked and chopped
  • 1 lb grilled chicken breast, diced or shredded (I prefer shredded)
  • 1/2 avocado, diced
  • 1 c grapes, halved
  • 1/4 c dried cranberries
  • 1/4 c Whole Milk Plain Greek Yogurt
  • 1 tbsp honey
  • 1/2 teaspoon lemon zest
  • juice from 1/2 of a lemon
  • salt and pepper to taste

Directions

  1. Combine bacon, chicken, avocado, grapes, and cranberries in a large bowl.
  2. Whisk together yogurt, honey, lemon zest, lemon juice, and salt and pepper in a small bowl until mixed well.
  3. Pour yogurt dressing over chicken salad mixture and toss to coat.
  4. Serve as desired.
