I had almost forgotten how amazing this meatloaf is! It somehow had fallen off of my regular menu planning and I hadn’t made it in months. I’m so glad I remembered to grab the ingredients for it at the store last week, because it’s so simple & tasty! We often pair it with a sweet potato (which makes for a very orange plate, ha), or some sort of veggie. Keep it simple, right!?
You could easily make this into meatballs! Just roll into 1 in balls and bake them on top of a mini muffin tin (an easy meatball cooking hack I recently saw!) for a great appetizer or for a summer bbq! Enjoy my repost below from July 25th, 2013…
This recipe is one of Brandon & I’s very favorite go-to dinners!! It’s super easy & has so much flavor! Once again, this recipe is from Juli over at PaleOMG. If you’ve never browsed around her site & recipes, definitely pull up a seat and your ipad one afternoon & get to browsing! Make sure you’ve just eaten, or else your mouth might be watering & your stomach growling afterwards ?
Ok, back to this delish recipe…
(Julie made her’s mini meatloafs – I always make one big one!)
Ingredients
- 1 lb ground chicken
- 1 egg
- 3 tbsp coconut flour or 1/2 c almond flour (I use almond flour)
- 3-4 tbsp hot sauce (I use 4 tbsp of Red Hot because we like it hot! 😉 )
- 2 stalks of celery, diced
- 1/4 small yellow onion, diced (I use 1 tsp onion powder when I’m lazy)
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1/4 tsp celery salt
- salt & pepper to taste
- Preheat oven to 375 degrees.
- Put all ingredients in a bowl and mix thoroughly by hand or with paddle beater.
- Put 1/2 of mixture into 2 mini loaf pans OR 1 large loaf pan.
- Bake for 25 minutes or until chicken is completely cooked through.
- Let cool & eat!!
