You can thank coach Gary for sharing this yummy recipe! It’s adapted from Livin Paleo’s Buffins recipe! Pretty easy & makes a great breakfast on the run or afternoon snack. You can even top with a little frosting & have a not so bad for you dessert!
Feel free to add in mix-ins as well, some nuts, raisins, or chocolate chips would be delicious! Happy baking!
Buffins – makes 16
Ingredients
- 2 tbsp coconut oil, melted
- 4 eggs
- 3 tbsp honey
- 1 tsp vanilla
- 1/2 tsp apple cider vinegar
- 1/2 cup coconut flour
- 1/4 cup almond flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup IsaLean Creamy Dutch Chocolate protein powder
- 1/4 cup water
- 3 large ripe bananas
Directions
- Preheat oven to 350F & line your muffin pan with cupcake liners.
- Place coconut oil, eggs, honey, vanilla & apple cider vinegar in a bowl and beat with a mixer until well combined.
- In another bowl, stir together flours, baking soda and salt. Pour in with the egg mixture and beat on high again.
- Mash the bananas with the protein powder and water until a mush is formed, combine with the other ingredients and beat on medium until well combined
- Bake for approx. 20-25 minutes. Buffins are done with a toothpick comes out clean.
