buffins

You can thank coach Gary for sharing this yummy recipe! It’s adapted from Livin Paleo’s Buffins recipe!  Pretty easy & makes a great breakfast on the run or afternoon snack.  You can even top with a little frosting & have a not so bad for you dessert!

Feel free to add in mix-ins as well, some nuts, raisins, or chocolate chips would be delicious!  Happy baking!

Buffins – makes 16

Ingredients

  • 2 tbsp coconut oil, melted
  • 4 eggs
  • 3 tbsp honey
  • 1 tsp vanilla
  • 1/2 tsp apple cider vinegar
  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup IsaLean Creamy Dutch Chocolate protein powder
  • 1/4 cup water
  • 3 large ripe bananas

Directions

  1. Preheat oven to 350F & line your muffin pan with cupcake liners.
  2. Place coconut oil, eggs, honey, vanilla & apple cider vinegar in a bowl and beat with a mixer until well combined.
  3. In another bowl, stir together flours, baking soda and salt.  Pour in with the egg mixture and beat on high again.
  4. Mash the bananas with the protein powder and water until a mush is formed, combine with the other ingredients and beat on medium until well combined
  5. Bake for approx. 20-25 minutes. Buffins are done with a toothpick comes out clean.
