Need a quick, easy & delicious meal for Thanksgiving morning?  Boom, here ya go!  Clearly we’re big fans of Juli Bauer and PaleOMG over here!  She’s hilarious and always delivers, so I’m sure this 5 ingredient (yes, that’s right, only 5 ingredients!!!) casserole will be delicious and on point.  Can’t wait to try it!

And ya know what’s great about breakfast casseroles…they don’t even have to be for breakfast all the time!  Save the leftovers for lunch or dinner or cook this right up for a super easy dinner on a busy night.  Love it!!

5 Ingredient Butternut Squat & Sage Breakfast Casserole

Ingredients

  • 2 c diced butternut squash (just go ahead and do yourself a favor and buy the pre cut stuff in the produce section!)
  • 2 tbsp ghee
  • 1 lb breakfast sausage
  • 1 tbsp minced sage + extra sage leaves for garnish
  • 10 eggs, whisked
  • salt & pepper to taste

Directions

  1. Preheat oven to 400 degrees F and grease an 8×8 baking dish.
  2. Toss butternut squash in ghee and sprinkle with salt.  Place on a lined baking sheet and bake for 20-25 minutes until softened.  Reduce oven temperature to 350 degrees.
  3. Cook breakfast sausage over medium heat, breaking it apart until no pink remains.
  4. Whisk eggs.  Add the butternut squash, minced sage and salt and pepper.  Pour mixture into greased baking dish.  Top with sage leaves and cook in oven for 30-40 minutes until set (ie no jiggle remains).
  5. Enjoy!
