fingerling potatoes

These Crispy Taco Spiced Fingerling Potatoes with Hot Sauce Aioli from PaleOMG look divine!!  We love a good crispy potato wedge and one with taco seasoning & dipping sauce!?!  Say no more!  Can’t wait to try these alongside some salsa chicken, fajitas or just as a spicy side to dress up any dinner meat of choice.  Yum!

Crispy Taco Spiced Fingerling Potatoes with Hot Sauce Aioli

Ingredients

For the hot sauce aioli
  • ⅓ c avocado oil mayo
  • 2 tbsp hot sauce
For garnishes, if desired
  • cilantro, roughly chopped
  • green onions, sliced
Instructions
  1. Preheat oven to 425 degrees and line baking sheet with foil.
  2. Put potatoes in a large saucepan and cover with water. Place over medium heat and cover. Bring to boil and cook for about  10 minutes or until fork tender. Drain.
  3. Place potatoes on baking sheet and use a potato smasher or large fork to press the potatoes until they break open slightly. Brush each potato with oil then sprinkle taco seasonings on top.
  4. Place in oven and bake for 20 minutes, until potatoes are crispy.
  5. While the potatoes cook, mix together the mayo and hot sauce until combined. Keep in the fridge until potatoes are ready.
  6. Once the potatoes are done cooking, drizzle the aioli on top and sprinkle with cilantro and green onions before serving!
