salsa

We love salsa at the Shuck house!  Such a great snack along with some plantain or corn chips, on top of some grilled or shredded chicken, or on top of a big taco bowl!  Yum!!!

This recipe is super easy & makes a delicious, no sugar added restaurant style salsa right at home!  So many grocery store brands are chocked full of sugar and have added preservatives.  This salsa will make several cups and will keep in your fridge in an air tight container for about a week.

Easy Restaurant Style Salsa (adapted from here)

Ingredients

  • 1 can Fire Roasted Tomatoes (can sub regular Roasted Tomatoes to reign in heat)
  • 1 small can organic diced tomatoes (including liquid)
  • 1 large slice of onion (any kind, we prefer yellow)
  • 3 whole garlic cloves
  • 1 whole chili or jalapeno pepper (we prefer chili pepper)
  • 1 handful of cilantro
  • juice from half a lime
  • 1 tsp ground cumin
  • 1 tsp dired oregano
  • salt & pepper to taste
  • optional – corn, black beans, pineapple or peaches

Directions

  1. Place all ingredients into magic bullet, blender or food processor.  Blend until desired texture is achieved.
  2. Stir in optional ingredients by hand.
  3. Can be served immediately.  Best served chilled the second day so flavors and juices can marinate.
