Tired of eggs for breakfast?  Need a new breakfast for dinner hack?  Try these Easy Sweet Potato pancakes!  They have 3 ingredients & are an easy way to use some leftover sweet potato.  Top with some almond butter, honey or syrup – yum, yum!

Easy Sweet Potato Pancakes

Ingredients

  • 1 medium sweet potato, baked and peeled
  • 2-3 eggs
  • cinnamon, to taste
  • butter or coconut oil for the griddle/pan

Directions

  1. Bake and peel your sweet potato.
  2. Mix sweet potato and eggs to get desired consistency.  Start with 2 eggs and add a third if needed.
  3. Heat griddle or pan with butter or coconut oil.
  4. Pour small dollar pancakes onto griddle or pan.
  5. Let each pancake cook for 3-5 minutes per side.
  6. Enjoy!!

Really, it doesn’t get much easier!
