Egg-Roll-In-A-Bowl

This recipe for an Egg Roll in a Bowl from Tip Hero is seriously so easy & super flavorful!!  It took maybe 20 minutes from start to finish and was a crowd pleaser!  Definitely my kind of meal.  Plus it’s an easy way to get in some veggies, feel like you’re indulging in some take out when you’re not, and you won’t be slaving in the kitchen for hours!

I adapted the recipe slightly below.  I also doubled it to have leftovers and served it over caulirice instead of white rice.  So do as you prefer!  Hope you enjoy!

Healthy Egg Roll in a Bowl

Ingredients

  • 1 lb ground turkey
  • 1 – 16-ounce bag coleslaw mix (shredded carrots and cabbage)
  • 5 cloves garlic, minced
  • 1 tsp ground ginger
  • 1/3 c coconut aminos
  • 2 tbsp sesame oil

Directions

  1. In a large skillet or wok, brown the turkey over medium-high heat.
  2. While the turkey is cooking, combine the garlic, ginger, coconut aminos and sesame oil in a small bowl and set aside.
  3. Once turkey is cooked through, add the shredded cabbage and carrots and stir to combine.
  4. Pour the sauce mixture over the meat and veggies. Stir and cook for about 5 minutes, until the cabbage has just begun to wilt but is still crunchy.
  5. Serve over caulirice or white rice and garnish with green onions, chopped almonds, or sesame seeds if desired.
