Fiesta-Pulled-Pork-Image

I’ve yet to make this recipe, but you best believe it’s going on my meal plan for next week!  The crockpot is my friend, I’ve been using it quite regularly, lately!  Busy mama + crockpot = healthy meals for all + leftovers.  No brainer since I can get at least 2 nights worth of meals out of 1 day of prep/cooking.

This fiesta pulled pork sounds amazing!!  It would be perfect served over a bed of lettuce with your favorite taco toppings, in a tortilla or with a few corn chips!  Yum!

Fiesta Pulled Pork

Ingredients

  • 4-5 lb pork shoulder
  • 5 cloves garlic, roughly chopped
  • 1 tbsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp oregano
  • 1/4 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • juice of 2 limes
  • 1 c orange juice

Directions

  1. Place the pork shoulder and garlic in the crock pot.
  2. Sprinkle dry seasonings onto the pork and rub in.
  3. Add lime and orange juice.
  4. Cover and cook on low for 8 hours.
  5. Shred meat with 2 forks (should fall apart easily).
  6. Preheat broiler.  Line a baking sheet, place shredded meat onto the baking sheet and spoon some juices over the top.
  7. Broil for 5-10 mins until you have browned edges on the pork.
  8. Serve over lettuce, in a tortilla, with chips or a fork.  Top with cilantro, avocado, salsa, lime juice, pineapple, cheese, etc.
