Another week, another recipe from PaleOMG 🙂 I love baking way more than I like cooking!  And sometimes you just want a yummy muffin with a cup of coffee.  These sound amazing!!  And they’re pretty enough to add to a menu for a spring wedding shower or baby shower!  Plus, they’re Paleo, so practically a guilt free indulgence!

Lavender Lemon Poppyseed Muffins

Ingredients

  • ½ cup coconut flour
  • ½ cup tapioca flour
  • ½ cup maple sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 tablespoon dried lavender buds
  • 1 tablespoon poppyseeds
  • pinch of salt
  • ⅔ cup applesauce
  • 3 eggs, whisked
  • zest of 1 lemon
  • ¼ cup lemon juice (juice of 1 lemon)
  • 2 teaspoons almond extract

Directions

  1. Preheat oven to 350 degrees.
  2. Whisk together dry ingredients (flours, sugar, baking soda, baking powder, lavender buds, poppyseeds and salt) in a large bowl to combine.
  3. In medium bowl, mix wet ingredients (applesauce, eggs, lemon zest, lemon juice and almond extract) until well combined.
  4. Pour wet mixture into dry mixture and combine.
  5. Grease a muffin tin and scoop muffin mixture into muffin tray.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
