Another week, another recipe from PaleOMG 🙂 I love baking way more than I like cooking! And sometimes you just want a yummy muffin with a cup of coffee. These sound amazing!! And they’re pretty enough to add to a menu for a spring wedding shower or baby shower! Plus, they’re Paleo, so practically a guilt free indulgence!

Lavender Lemon Poppyseed Muffins
Ingredients
- ½ cup coconut flour
- ½ cup tapioca flour
- ½ cup maple sugar
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 tablespoon dried lavender buds
- 1 tablespoon poppyseeds
- pinch of salt
- ⅔ cup applesauce
- 3 eggs, whisked
- zest of 1 lemon
- ¼ cup lemon juice (juice of 1 lemon)
- 2 teaspoons almond extract
Directions
- Preheat oven to 350 degrees.
- Whisk together dry ingredients (flours, sugar, baking soda, baking powder, lavender buds, poppyseeds and salt) in a large bowl to combine.
- In medium bowl, mix wet ingredients (applesauce, eggs, lemon zest, lemon juice and almond extract) until well combined.
- Pour wet mixture into dry mixture and combine.
- Grease a muffin tin and scoop muffin mixture into muffin tray.
- Bake for 20-25 minutes or until a toothpick comes out clean.
