Saturday here was on the chilly side (for May, anyways) and a little rainy, so it just seemed like the perfect evening to bake a yummy cookie! I’ve tried many a Paleo cookie and have several favorites (these and these), but wanted to try something new. I also needed a recipe that I had all the ingredients for on hand, because I wasn’t going back out 😉
So, of course, PaleOMG to the rescue! I adapted her Strawberry Dark Chocolate Chunk cookies & they were delish!! For the record, Juli Bauer is a MUCH better food photographer than I am, so excuse my picture! Haha
I made them on the bigger side, whoops, and *almost* burned them since they were larger and I wasn’t sure if they were done baking. But they ended up perfect, crispy on the outside, chewy on the inside! Plus, it didn’t make a TON of cookies so it’s good I won’t have cookies sitting around for a week tempting me. They’ll be gone today!
Here is my adapted recipe…
Paleo Chocolate Chip Cookies
Ingredients
- 1 cup almond butter
- 1 cup coconut palm sugar
- 1 egg, whisked
- 1 tablespoon tapioca flour
- 1 tablespoons coconut flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- pinch of salt
- 1/4 c Enjoy Life Chocolate Chips
Directions
- Preheat oven to 350 degrees.
- In a large bowl, mix together almond butter and maple sugar.
- Add egg and mix until well combined.
- Add tapioca and coconut flours, baking soda, vanilla, salt and chocolate chips and mix to combine.
- Scoop out around 2 tablespoons of dough and make into a round ball. Place on baking stone or parchment paper lined baking sheet. Once you’ve placed all the dough onto the baking sheet, flatten slightly.
- Place stone or baking sheet in the oven and bake for 10-12 minutes.
- Remove from oven and let cool for 5-10 minutes until removing from stone or baking sheet to place on cooling rack.
- Enjoy!
