The internet is so crazy because it can “introduce you” to so many wonderful people! I’ve been following Jennifer from Life in the Green House blog for years now. She and a friend embarked on a year long adventure they dubbed LiveWhole365 in which they are eating clean/whole30/paleo for the majority of a full year, with some very calculated “cheats” throughout the year.
Check out their Instagram for lots of great recipe ideas! I saw this one & had to share it on the blog, it sounds SO good & could be eaten several ways. Plus, nobody wants the oven running in the summer, so just whip out the crockpot!
Paleo Chipotle Slower Cooker Beef Brisket
Ingredients
- 2 c beef broth
- 2 tsp minced fresh oregano
- 3/4 tsp ground cinnamon
- 2 chipotle peppers in adobo sauce (from the can) minced
- 2 cloves of garlic pushed through a garlic press
- 3 lb beef brisket
- 1 tsp salt
- 3/4 tsp pepper
Directions
- Mix all ingredients (excluding the brisket) in the slow cooker.
- Add in the brisket and flip several times to coat.
- Cook on hight 7 hours and shred with a fork.
- Serve overtop lettuce wraps with salsa, top a sweet potato, in a lettuce bowl, overtop caulirice, etc.
