How amazing does this Salmon look? My wonderful Isagenix Team runs fun little FB challenge groups every so often and someone in the group shared this recipe this week! I can’t wait to try it, fits all my criteria of easy and healthy 😉
Plus, it seems like the perfect summertime dinner. Serve with a veggie side of choice, maybe some a sweet potato or on top of some caulirice since you’re already got something green right on top of your salmon! Grab these ingredients at the store & add this to your dinner menu asap! Enjoy!
Spinach and Tomato Topped Salmon
Ingredients
- 1 filet of salmon (about 2 lbs +/-)
- 6 tbsp butter, melted
- 1/4 c finely chopped basil
- 6 garlic cloves, crushed
- 1 tbsp white wine
- 1 tbsp squeezed lemon juice
- salt & black pepper to taste
- 1/4 c shredded parmesan cheese
- 1 shallot, chopped
- 6 c spinach
- 8 0z cherry or grape tomatoes, sliced in half
- 2 tbsp olive oil
Directions
- Preheat oven to 400 degrees.
- Line a baking dish with foil or parchment paper and place fish in the dish.
- In a bowl, combine melted butter, basil, garlic, white wine, and lemon juice.
- Season fish with salt and pepper and pour butter mixture over fish.
- Sprinkle with parmesan cheese.
- Cover fish with foil or parchment paper by over lapping paper on top then folding the sides under the fish. (Just make sure it is all sealed up!)
- Bake for about 20 -25 minutes.
- While fish is baking, heat olive oil in a sauté pan over medium heat.
- Add shallots and cook until softened.
- Add tomatoes and cook until slightly soft.
- Add spinach, turn off the heat, and continue to stir gently until spinach slightly wilts and softens.
- Arrange salmon on a serving plate and add spinach with tomatoes over salmon.
- Serve and enjoy!
