These are by far the easiest & tastiest Paleo Pumpkin Muffins I’ve made to date! Not too pumpkin-y and even better with a few chocolate chips thrown in 😉
Paleo Pumpkin Muffins
Serves: 6
Ingredients
- 1 cup almond flour
- 1 cup canned pumpkin
- 2 eggs
- 1/4 cup almond butter
- 1/4 cup honey
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/2 cup chopped walnuts or chocolate chips (optional)
Directions
- Preheat oven to 350.
- Combine all ingredients in mixing bowl & mix well.
- Coat muffin tin with non-stick spray (or use paper liners) and divide batter among 6 cups.
- Bake for 32-35 minutes or until cooked all the way through.
- Allow to cool.
- Enjoy!
