carrot ginger broccoli slaw

Need a tangy side for that summer BBQ?  Try this yummy twist on regular ol cole slaw, it’s a healthy alternative and sure to be a crowd pleaser!!  Plus, it’s pretty easy to make, keeps well and tastes even better the next day!

Broccoli Slaw with Carrot Ginger Dressing

Ingredients for the slaw:

  • 1 bag broccoli slaw
  • 1 carrot, grated
  • 2 scallions, chopped
  • 1/2 avocado, diced
  • fresh cilantro, chopped (to taste)
  • slivered almonds

Ingredients for dressing:

  • 1/2 c apple cider vinegar
  • 2 carrots, chopped
  • 1 tbsp minced ginger
  • 2 scallions, whites only
  • 1 tsp Dijon mustard
  • 1/3 c organic mayo
  • salt & pepper to taste

Directions

  1. Combine all ingredients for dressing in a blender of food processor and blend until smooth.
  2. Pour 2-4 tbsp as desired over broccoli slaw and mix well.
  3. Refrigerate and serve.
