Need a tangy side for that summer BBQ? Try this yummy twist on regular ol cole slaw, it’s a healthy alternative and sure to be a crowd pleaser!! Plus, it’s pretty easy to make, keeps well and tastes even better the next day!
Broccoli Slaw with Carrot Ginger Dressing
Ingredients for the slaw:
- 1 bag broccoli slaw
- 1 carrot, grated
- 2 scallions, chopped
- 1/2 avocado, diced
- fresh cilantro, chopped (to taste)
- slivered almonds
Ingredients for dressing:
- 1/2 c apple cider vinegar
- 2 carrots, chopped
- 1 tbsp minced ginger
- 2 scallions, whites only
- 1 tsp Dijon mustard
- 1/3 c organic mayo
- salt & pepper to taste
Directions
- Combine all ingredients for dressing in a blender of food processor and blend until smooth.
- Pour 2-4 tbsp as desired over broccoli slaw and mix well.
- Refrigerate and serve.
