Who would think to put cottage cheese in your scrambled eggs!? Well over at He & She Eat Clean, they did & they claim these are the perfect scrambled eggs! The cottage cheese makes them cheesy & full fat tasting, without all the calories 😉 And, excellent macros! 5f/1c/22p Low in fat, practically no carbs & high in protein!
Ingredients
- 3 organic egg whites
- 1 whole organic egg
- 2 tbsp 2% cottage cheese
- salt & pepper to taste
- coconut oil to coat pan
Directions
- Coat pan with coconut oil. Add eggs.
- Sprinkle with salt & pepper.
- Wait until eggs start to bubble, then fold in cottage cheese.
- Scramble eggs in the pan, combining eggs & cheese.
- Yum, yum! Enjoy!
