This tasty recipe comes from Skinnytaste.com and is sure to be a crowd pleaser as the fall temperatures are finally arriving!! I love that this soup can be made in under 30 minutes and you can top it with your favorite toppings, like shredded cheese, plain greek yogurt or sour cream, green onions, cilantro, etc. It will also freeze well, so that’s an added bonus! I made a few adjustments for our tastebuds, so may adapted version is below.
Ingredients
- 1 1/3lb lean ground turkey
- 1 med onion, chopped
- 1 red bell pepper, chopped
- 10 oz can rotel tomatoes with green chilis
- 15 oz frozen corn
- 15 oz black beans, drained
- 8 oz tomato sauce
- 16 oz refried beans
- 1 heaping tbsp homemade taco seasoning
- 2 1/2 c chicken broth
Directions
- Brown the ground turkey in a large pot over medium heat.
- When mostly cooked through, add the onion and pepper and cook for about 3 minutes.
- Add the remaining ingredients, bring to a boil and let simmer for about 10-15 minutes.
- Top as desired & eat up!
