This recipe hails from Juli Bauer, the blogger and chef behind PaleOMG. PaleOMG is one of my favorite go to Paleo sites for delish recipes & this one does not disappoint!! It’s really easy to make, the hardest part is waiting for it to set in the fridge so you can eat it!!
Crust
- 12 pitted dates
- 1 c cashews
- 2 tbsp almond butter
- 1 tsp cinnamon
- pinch of salt
Toppings
- 6-8 oz blackberries (I used raspberries cause I hate all the seeds in blackberries!)
- 6-8 oz blueberries
- 1/4 c maple syrup
- 1/4 coconut butter
- sprinkle of cinnamon
- pinch of salt
- Pulse all crust ingredients in a food processor.
- Press crust into bottom of a bread pan.
- Heat small sauce pan over medium heat. Add fruit & maple syrup.
- Continuously stir so mixture doesn’t stick to the bottom of the pan.
- Once you have an almost runny jam, add your softened coconut butter along with cinnamon and salt.
- When all ingredients are incorporated, pour mixture on top of crust and spread flat.
- Put in the fridge to harden. (1 hr +)
- Cut into squares & enjoy!!
