Easy Sweet Potato Pancakes
Ingredients
- 1 medium sweet potato, baked and peeled
- 2-3 eggs
- cinnamon, to taste
- butter or coconut oil for the griddle/pan
Directions
- Bake and peel your sweet potato.
- Mix sweet potato and eggs to get desired consistency. Start with 2 eggs and add a third if needed.
- Heat griddle or pan with butter or coconut oil.
- Pour small dollar pancakes onto griddle or pan.
- Let each pancake cook for 3-5 minutes per side.
- Enjoy!!
