It is entirely too hot to be using the oven, stove or even the crockpot lately!! And I am ALL about, quick, easy, simple recipes that have very few ingredients! This recipe definitely fits the bill. I adapted this recipe from Cook Eat Paleo to fit my taste buds, so feel free to do the same!
Avocado Tuna Salad
Ingredients
- 1 avocado
- 1 lemon, juiced, to taste
- 5-10 red grapes, quartered
- small handfull of pecans, chopped
- 1 can of tuna
- salt & pepper, to taste
Directions
- Cut the avocado in half and scoop out the middle into a bowl. Discard pit & shells (unless you plan to serve in the shells, as pictured. I’m not fancy like that 😉 )
- Add tuna, other mix-ins & lemon juice and mix with the avocado. Taste & adjust as needed (more lemon juice and/or salt & pepper).
- Eat it up!!
SO easy right!? Feel free to sub shredded chicken instead of tuna. Enjoy as lunch or dinner or just half of an avocado for a snack. Yum!
