cashew chicken

This adapted recipe from Damn Delicious takes classic takeout to a healthy at home dish!  It’s so easy & so tasty, made in the crockpot, and reheats well, so be smart & double it to have leftovers 🙂

I adapted it slightly to be slightly more paleo friendly, but then served it over rice which is totally not paleo, ha.  It would be delicious over cauli-rice as well!

Slow Cooker Cashew Chicken

Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts in 1 inch cubes
  • salt & pepper to taste
  • 1 c raw cashews
  • 2 green onions
  • For the sauce:
  • 1/4 c coconut aminos
  • 2 tbsp ketchup
  • 2 tbsp apple cider vinegar
  • 1 tbsp coconut palm sugar
  • 3 cloves garlic, minced
  • 1 tbsp ginger paste
  • 1/4 tsp red pepper flakes

Directions

  1. Whisk together all ingredients for the sauce and set aside.
  2. Heat olive oil over med high heat in a large skillet.
  3. Season chicken with salt & pepper, add to pan and cook until seared on all side, about 2 minutes.
  4. Place chicken in slow cooker & cover with sauce.  Cook on low heat for 2-3 hours.
  5. Add cashews and cook for an additional 15 minutes.
  6. Serve over rice or cauli-rice, garnish with green onion.
