This adapted recipe from Damn Delicious takes classic takeout to a healthy at home dish! It’s so easy & so tasty, made in the crockpot, and reheats well, so be smart & double it to have leftovers 🙂
I adapted it slightly to be slightly more paleo friendly, but then served it over rice which is totally not paleo, ha. It would be delicious over cauli-rice as well!
Slow Cooker Cashew Chicken
Ingredients
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts in 1 inch cubes
- salt & pepper to taste
- 1 c raw cashews
- 2 green onions
- For the sauce:
- 1/4 c coconut aminos
- 2 tbsp ketchup
- 2 tbsp apple cider vinegar
- 1 tbsp coconut palm sugar
- 3 cloves garlic, minced
- 1 tbsp ginger paste
- 1/4 tsp red pepper flakes
Directions
- Whisk together all ingredients for the sauce and set aside.
- Heat olive oil over med high heat in a large skillet.
- Season chicken with salt & pepper, add to pan and cook until seared on all side, about 2 minutes.
- Place chicken in slow cooker & cover with sauce. Cook on low heat for 2-3 hours.
- Add cashews and cook for an additional 15 minutes.
- Serve over rice or cauli-rice, garnish with green onion.
