I was reeaallly craving pizza last night!!  So instead of ordering some delivery, I decided to try out a cauliflower crust!  I’ve tried one before, but it ended up mushy.  I think I found the trick with this one I adapted from The Lucky Penny Blog’s “The Best Cauliflower Crust Pizza“.

The trick is, you have to wring the water out of the cooked cauliflower!  If not wrung out, all that water makes for a mushy crust.  This crust, I could actually pick up & eat like normal pizza!  Yum!!

Cauliflower Crust

Ingredients

  • 1 head of cauliflower chopped into florets
  • 1 egg
  • 1/4 c parmesan cheese
  • 1/4 c parmesan romano cheese
  • 1/4 tsp salt
  • 1/2 tsp dried basil
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder

Directions

  1. Preheat oven to 450 and place pizza stone or pan in oven.
  2. Use a food processor and pulse cauliflower to form “rice”.  (I had 1 large head of cauliflower and this yielded about 5 cups of cauli “rice”!  I doubled the rest of the recipe and was able to make 2 pizzas.)
  3. Microwave your cauli rice for 4 mins.
  4. Let it cool enough to handle it, then wring out water using a dish towel.  (I was able to wring out about 3/4 cup of water from my 5 cups of cauli rice.)
  5. Combine cauli rice and other ingredients to form “dough”.
  6. Spray parchment paper with cooking spray and form your crust.
  7. Using a cutting board or another pan, transfer parchment paper and crust to stone/pan in oven.
  8. Bake for 10-12 mins.
  9. Top with desired ingredients and bake for another 8-10 mins.
  10. Let cool, slice & enjoy!!

This one has a few steps, but it’s so worth it!!  And this way you can enjoy your favorite pizza with a few less carbs 😉
