With the frigid temps outside, soup just seems like the perfect dinner choice!  This Chicken and Sausage Soup from Life in the Greenhouse Blog has the right amount of heat to keep you warm & toasty.  And, a one pot easy meal that makes enough for leftovers is winner, winner chicken dinner in my book!!

This recipe is paleo and whole 30 approved.  If you’re feeling not so strict, though, feel free to add a little greek yogurt or a sprinkle of cheese to top it off.  Enjoy!

Chicken and Sausage Soup

Ingredients
  • 1 rotisserie chicken, pulled
  • 1 package Pederson Farms W30 approved sausage. sliced and browned in a skillet
  • 2 medium sweet potatoes, peeled and diced
  • 5 oz package fresh spinach
  • 28 ounce can fire roasted diced tomatoes
  • 2 bell peppers any color diced
  • 1 small onion, diced
  • 4 cups chicken broth
  • 2 cloves of garlic, pressed
  • Frank’s hot sauce to taste (a good 8-10 shakes)
  • Salt, if desired
Instructions
  1. Start by browning onions, peppers, and garlic (just put 2 small cloves through a garlic press) in a large pot or dutch oven. Cook until tender.
  2. Add all other ingredients and cook until sweet potatoes are fork tender.
