Did someone say Mexican? And slow cooker? AND freezer meal?? Ok yes, I need this meal in my life ASAP! This recipe hails from Damn Delicious and is not only easy and healthy, but the whole family will approve!
Heading into fall, starting back to school, getting back into routine, make a few of these each month and stash them away in the freezer for an easy weeknight meal! And you can serve it any way you choose – over caulirice, white or brown rice, in a tortilla, over some plantain or corn chips – lots of options!

Slow Cooker Cilantro Lime Chicken Freezer Meal
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts
- 1 15 oz can black beans, drained and rinsed
- 1 10 oz can Rotel Mild Diced Tomatoes & Green Chilies
- 1 c corn kernels, frozen, canned or roasted
- 1/2 c salsa, homemade or store-bought
- 1/2 c chopped fresh cilantro leaves
- 1 red onion, diced (we will leave red onion out, as we don’t love it!)
- 1 jalapeño, diced
- 2 tsp cumin
- 2 tsp chili powder
- 4 cloves minced garlic
- salt and pepper, to taste
- Juice of 2 limes
Directions
- Combine chicken, beans, tomatoes, corn, salsa, cilantro, onion, jalapeno, cumin, chili powder and garlic in a large bowl or into a freezer bag. Place in freezer for up to 1 month if not cooking right away.
- Thaw freezer mixture for 12-24 hours prior to putting into slow cooker.
- Place chicken mixture into a 6-qt slow cooker; season with salt and pepper, to taste. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours. Stir in lime juice.
- Serve & enjoy!
