Today’s recipe is adapted from the Food Babe‘s Green Chili Recipe! I adapt it and use zucchini instead of green peppers. It may sound odd, but we’re just not green pepper kind of people in the Shuck household, and I still wanted to incorporate a veggie in this dish.
This chili is so tasty and a nice twist on traditional chili. Plus, clean ingredients you can feel good about feeding your family, guests or yourself! Thumbs up all around!
Green Chili (serves 6 – 1 serving 5f/22c/22p)
Ingredients
- 1 tbsp olive oil
- 1 lb ground white turkey
- 3 zucchini, cut into 1 in chunks
- 1 onion, chopped
- 2 tbsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp salt
- 1 jar of tomatillo salsa (the green kind)
- 1 can diced green chiles
- 1 jalapeño, seeded and chopped
- 1 quart vegetable broth
- 1 can cannellini beans
- optional toppings: cilantro, sour cream, cheese, lime wedge
Directions
- Heat 1/2 tbsp oil in large pot
- Add turkey & cook until browned
- Remove turkey, return pot to heat
- Add remaining oil, zucchini & onion and cook until soft
- Add turkey back & mix well with spices
- Add salsa, chiles, jalapeño and broth, reduce heat & simmer, uncovered, for 40 mins
- Stir in beans & cook for 30 more mins
- Top with cilantro, a dollop of sour cream (or plain greek yogurt) & lime wedge
