I made this recipe several Christmases ago and remembered it recently. I figured it would be a nice compliment to a yummy Christmas cookie to make this week, but I couldn’t remember where I got the recipe. After scouring a few of my favorite paleo blogs, I finally found it on Elana’s Pantry!
This recipe requires little cooking, has only 4 ingredients & is super easy! You could sub in a different nut if you prefer, maybe cashews or pistachios, and customize it to your liking! Plus it’s the perfect different kind of non-cookie to bring to a cookie swap this time of year or leave for Santa if he’s gone paleo 😉
Can’t wait to make these again! Hope you enjoy!
Orange Chocolate Coconut Clusters
Ingredients
- 2 c chocolate chips (I use my favorite Enjoy Life chocolate chips!)
- 1 tsp orange extract
- 1 c almonds, toasted then coarsely chopped
- 1 c unsweetened shredded coconut, toasted
Directions
- Chop almonds and toast over medium low heat in a saute pan. Remove almonds from pan and set aside.
- Toast coconut over medium low heat. Remove and set aside.
- Melt the chocolate over very low heat in a medium sauce pan.
- Stir in the orange extract.
- Stir in cooled almonds and coconut into the melted chocolate.
- Drop by heaping tablespoonfuls onto a parchment paper lined baking sheet.
- Allow to cool. (I like to place clusters in the refrigerator or freezer to speed the process along.)
- Serve & enjoy!
