It’s pumpkin everything season!!! Clean Simple Eats does it once again & shares a super tasty recipe for Pumpkin Chocolate Chip Bread. This makes 2 loaves so you can make some for yourself and some to pass along to a friend! Enjoy!!
Pumpkin Chocolate Chip Bread
Ingredients
- 15 oz pumpkin puree
- 3 eggs
- 3/4 c honey
- 3/4 c coconut sugar
- 1/2 c unsweetened applesauce
- 1/2 c nonfat plain greek yogurt
- 2 tbsp fresh orange juice
- 1/2 tbsp molasses
- 1 tsp vanilla
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 3 c white whole wheat flour (could sub almond flour)
- 1 c dark chocolate chips
Directions
- Preheat oven to 350 degrees.
- Mix pumpkin, eggs, honey, coconut sugar, applesauce, yogurt, orange juice, molasses, & vanilla together.
- In a separate bowl, mix together flour, cinnamon, nutmeg, cloves, baking soda, baking powder and salt.
- Combine wet and dry ingredients and then stir in chocolate chips.
- Pour batter into 2 greased 9×5 pans and sprinkle remaining chocolate chips on top.
- Bake for 40 minutes, cover with foil and bake for 10 more minutes. Let cool and serve.
