If you’d like to add a little color and flavor to your Thanksgiving menu, may I suggest PaleOMG‘s Maple Dijon Roasted Carrots? We all know there will be a few versions of potatoes sitting out and enough casserole options to tide you over to next year, so why not add these tasty carrots to your spread. Ingredients
- 2lbs multi-colored carrots, peeled and trimmed
- 1/4 c maple syrup
- 1/4 c dijonnaise
- 2 tbsp olive oil
- pinch of sea salt
- pinch of red pepper flakes
- handful of chives, chopped
- handful of pistachios, chopped
Directions
- Preheat oven to 400 degrees.
- Line a baking sheet with aluminum foil and place trimmed carrots on top.
- Whisk together maple syrup, dijonnaise, olive oil, sea salt and red pepper flakes. Pour 2/3 of mixture on top and toss to completely coat.
- Bake for 35 minutes, tossing half way through.
- Heat remaining 1/3 of mixture and pour over carrots. Top with chives and pistachios and serve.
