If you’d like to add a little color and flavor to your Thanksgiving menu, may I suggest PaleOMG‘s Maple Dijon Roasted Carrots? We all know there will be a few versions of potatoes sitting out and enough casserole options to tide you over to next year, so why not add these tasty carrots to your spread.  Just pick up these few ingredients below & you’ll be all set this Thanksgiving!  Enjoy!

Maple Dijon Roasted Carrots

Ingredients

  • 2lbs multi-colored carrots, peeled and trimmed
  • 1/4 c maple syrup
  • 1/4 c dijonnaise
  • 2 tbsp olive oil
  • pinch of sea salt
  • pinch of red pepper flakes
  • handful of chives, chopped
  • handful of pistachios, chopped

Directions

  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with aluminum foil and place trimmed carrots on top.
  3. Whisk together maple syrup, dijonnaise, olive oil, sea salt and red pepper flakes.  Pour 2/3 of mixture on top and toss to completely coat.
  4. Bake for 35 minutes, tossing half way through.
  5. Heat remaining 1/3 of mixture and pour over carrots.  Top with chives and pistachios and serve.
