Happy Wednesday!  I’m off my normal Menu Monday game this week, so What’s Cooking Wednesday is happening!  This recipe for slow cookie Paleo Chili has been a favorite for several years now & I really thought I had shared it here before.  I’m not a huge fan of beans, so this is the perfect chili in my opinion!! A friend and former CFP member shared this recipe and graphic with me, but sadly I have no clue where to give credit for it and can’t link it back anywhere.

How great is it that the whole recipe is right in the graphic!?  It does take a bit of prep time, however it makes quite a bunch leaving plenty of leftovers and we can eat off of it for several meals!  It’s absolutely frigid outside so it’s perfect weather for some chili!

Below are the few changes I’ve made to make it my own.  It is delicious each and every time and one of my favorite cold weather meals!  Hope you enjoy!

Shuck Family Changes

  • We’re not huge sausage fans, so we sub out a full package of bacon.  I cook it up, crumble it and add it when adding the other meat to the crockpot.
  • I always do a large 28 oz can of crushed tomatoes and the normal 14 oz can diced tomatoes.  Not sure why, just what I’ve always done and if it ain’t broke… 😉
  • I never have bay leaves on hand so I always leave them out.
  • Sometimes we top with avocado, cheese or a little dallop of greek yogurt, but often we just eat it plain because it’s that good!
